With Valentine’s Day approaching, I’ve been brainstorming ideas of how I can make the month of February special, basically thinking of all the ways I can add pink to our daily lives! This recipe is a fast, easy, and fun idea for either dessert or brunch.
- 1 Beet
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup coconut milk
- 1/2 cup water
- 2 tablespoons butter
- 1/4 teaspoon salt
- Ice Cream
- Maple Syrup
- Bring a large pot of water to boil. Cook the beet until soft, about 30 minutes. Place beet in a blender with the water and milk. Blend until smooth.
- In a mixing bowl, whisk flour and eggs togoether. Then slowly add in the beet mixture. Add the salt and butter. Mix well.
- Lightly oil a frying pan. Pour the batter onto the pan and use a spatula to spread an even, thin layer.
- Cook crepe for about 1minute, or until cooked enough to be able to flip. Flip and cook for about 1minute more on the other side. Serve warm with your choice of toppings.
